The earliest harvests are often the most tenderly delicious. So far we've enjoyed dandelion crowns, fiddlehead ferns, dandelion greens, all gathered on our own land. I don't have cold frames or a greenhouse (yet!), so my seedlings are still tiny outside and my indoor starts are just getting hardened off to plant this weekend (at the earliest, I'm in zone 3 with a last frost date of June 1).
Whatever you're harvesting, it can be hard to find the time to cook when all the busy chores of spring await.
