The earliest harvests are often the most tenderly delicious. So far we've enjoyed dandelion crowns, fiddlehead ferns, dandelion greens, all gathered on our own land. I don't have cold frames or a greenhouse (yet!), so my seedlings are still tiny outside and my indoor starts are just getting hardened off to plant this weekend (at the earliest, I'm in zone 3 with a last frost date of June 1).

Whatever you're harvesting, it can be hard to find the time to cook when all the busy chores of spring await. I love to check out the great recipes and ideas from Molly Watson, About.com's Guide to Local Foods. She has yummy recipes for everything from arugula to sauteeing up greens and garlic, both in season right now.
